CAKE WITH EXTRA-VIRGIN OLIVE OIL
INGREDIENTS
• 300 g of flour 00
• 180 g of sugar
• 100 ml of Tulone extra-virgin olive oil
• 50 ml of milk
• 3 eggs
• Lemon peel
• 1 sachet of baking powder for cakes
PREPARATION
Put the sugar and the eggs in a bowl and whisk them with the electric whisk until you get a frothy and whitish mixture.
Add the milk at room temperature and continue beating with an electric whisk, add the extra-virgin olive oil and, gradually, the sifted flour and grated lemon peel.
Proceed to add the sifted baking powder for cakes and mix the mixture.
Oil a pan and pour the mixture, leveling the surface.
Bake the cake with extra-virgin olive oil in a preheated oven at 180 ° for about 40 minutes.
Before taking the cake out of the oven, always do the toothpick test, if it comes out dry it means that the cake is ready.
Allow the cake to cool completely and, if you want, you can sprinkle it with icing sugar
