Fajiatas
INGREDIENTS
400 g of sirloin beef
400 g of chicken breast
350 g of red bell peppers
350 g of yellow bell peppers
250 g of white onions
1 Lime (juice and peel)
20 g of Worcestershire sauce
10 g of coriander
1 pinch of cumin powder
Tulone extra-virgin olive oil
Salt
Black pepper
INGREDIENTS TO MAKE THE FAJITAS:
8 flour tortillas
Edamer cheese (to cut à la julienne)
Precooked black beans
Mexican tomato sauce
Guacamole
PREPARATION
First, prepare the meat: cut the sirloin into slices, then cut it into strips and do the same with the chicken breast.
Transfer the strips of meat into a baking tray and add the grated peel of a lime and its juice. Also add the chopped coriander, cumin, salt and pepper. Mix with your hands, then cover with cling film and leave to marinate in the fridge for an hour.
In the meantime, you can take care of the vegetables: peel the onion and cut it into slices, then remove the seeds and internal filaments from the bell peppers and cut them into strips.
After the marinating time is over, let the meat return to room temperature and heat a large pan. When it is hot, add a drizzle of oil, onion and bell peppers.
Cook over medium-high heat for about 10 minutes, then season with salt and pepper. At this point add the meat too, raise the heat and let brown it well, then add the Worcestershire sauce and cook for 5-6 minutes more.
When the filling is ready, you can assemble your fajitas. Lightly heat the tortillas and add the filling in the center. You can mix and match your favorite ingredients: we chose black beans, Edamer cheese, guacamole sauce and pico de gallo.
Close the flaps of the tortilla over the filling and serve.
